There I said it.
Don't hate me.
It's not that I don't like summer. I do.
And no-I am not looking forward to another freezing cold winter. I hate everything about winter (except, of course, for Christmas!)
But I LOVE everything about FALL!
And the signs are all around me, that my favorite time of year, is right around the corner.
The kiddo's are going back to school-the stores are putting out their Fall decor-and I'm starting to get into the 'nesting' mode.
Of course, I'm not pulling out the winter clothes just yet.
But I am starting to bake. A LOT. Which is what I do when Fall is coming.
I'm kind of like a squirrel hoarding his nuts for a cold winter day. Except I don't like nuts. I like apples.
Unfortunately, it's going to be couple of weeks before the apple stands in our area open up.
But that's okay.
The tartness of Granny Smith apples are the perfect compliment to this sweet apple dessert!
Apple Kuchen is one of the first apple treats I make in the Fall-and is definitely one of my favorites!
It is also VERY easy to make.
Here is what you'll need:
1-2 apples (I use Granny smith this time-but I've also used Wealthy, Jonathan, and McIntosh)
3/4 cup white sugar
1/4 cup shortening
1 egg
1/2 cup milk
1 1/2 cups flour
2 tsp baking powder
1/2 tsp salt
1/2 cup raisins
Preheat oven to 375.
In a large mixing bowl, combine sugar and shortening, egg and milk. Mix well. Add flour, baking powder and salt. Fold in raisins. Pour into a greased 9x9 pan.
Peel and slice apples, and arrange them on top of batter. (You can be creative here.)
Or just pile them on top like I did! :)
For the topping-
I combine
1/2 cup of white sugar (you can also use brown)
1/2 tsp cinnamon-
1/4 tsp of nutmeg
Sprinkle on top of apples.
Bake in oven for 25-35 minutes, or until golden brown and apples are tender.
Serve warm with a dollop of whipping cream and a drizzle of salted caramel sauce. YUMMY!
Tonight I'll be sorting through all my fall decorations.
For now-I think I'll take a quick break from work-pour myself another cup of coffee and have some Apple-Raisin Kuchen!
