Happy Halloween ya all!!
Here in our neck of the woods, Halloween is usually one of the coldest
nights in fall, and this year is no different!
Temperatures are expected to be in the low 40’s, and there is even a
chance of snow! Those poor kiddos (and
their folks) will definitely have to bundle up tonight!!!
Thankfully, hubby and I will be toasty warm ‘inside’ our
house this year, as we’ve decided to fore go the Halloween parties that usually
run well into the morning hours, and stay home this year.
But staying home doesn't mean we have to miss out on the fun
of Halloween!!
Since the trick-or-treaters usually head out pretty early in our neighborhood, we'll spend the first part of the evening checking out all of the adorable costumes, and handing out candy.
Of course, Bentley gets pretty excited when he hears the kiddo's voices, so we'll also be busy trying to keep him from sneaking out the front door!!!
After the big candy rush, hubby and I will take a break, an enjoy a nice (hopefully-quiet) dinner. Since we haven’t done a homemade pizza night in a few weeks, I thought we’d do one tonight. I haven’t decided what fixings we will put on the pizza yet, but whatever it is, you can be sure it will be good! I mean, who doesn't love pizza??? After dinner, it will be time for a scary movie, and a new Halloween tradition that we started last year!
A homemade Halloween treat!!!!
This year's treat is a combination of hubby's favorite cookie (Oatmeal Chocolate Chip), and my love of caramel (on/in) anything!
These Oatmeal Carmelita Bars are also VERY similar to mom's caramel bars, except for one thing.
I didn't have to take the extra time to melt the caramels, because the recipe calls for caramel topping!! Now that's what I'm talking about!! Easy is ALWAYS better-right??
The only problem I have now-is not biting into one of these yummy bars before tonight!!!

Oatmeal Carmelita Bars
1/4 cup flour
1 1/2 cups caramel ice cream topping
2 cups flour
2 cups quick cooking oatmeal
1 1/2 cups brown sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 cup melted butter
6 oz package semi-sweet chocolate chips
Preheat oven to 350. In a small bowl, combine 1/4 cup flour and caramel topping. Mix well and set aside. In a large bowl, combine 2 cups of flour, oats, brown sugar, baking soda, salt, and butter. Mix until crumbly. Press 2/3 of crumbly mixture into the bottom of an ungreased 9x13 pan. Sprinkle with chocolate chips. Pour caramel mixture on top of chocolate chips. Sprinkle remaining crumbly topping over caramel. Bake for 17-20 minutes. Let cool.
