Somehow she always knows when I need her. Like this morning. I was feeling a bit down and a WHOLE lot overwhelmed with work and all our 'projects.' Suddenly, just like SUPERWOMAN coming to save the day-mom appeared at the front door.
We shared a cup of coffee, and within minutes she had me smiling.
Of course mom never comes empty handed.
There is nothing better than fresh strawberries this time of year, and mom knew that with all that's been going on-I wouldn't have time to drive to our local strawberry patch and pick some.
So, while we chatted about everything and nothing at all....
I whipped up an angel food cake, using a recipe in a cookbook that mom gave me years and years ago.
It's funny, but, when my daughter, Mel was old enough to start her own family- I bought her a copy of this cookbook too!
When the cake was done-I let it cool, and mom and I took a short drive to our favorite cafe, and enjoyed a DELICIOUS chicken salad sandwich and a glass of cold lemonade.
Later, when we arrived home-I made up some fresh whipping cream................and put it all together...........
With another cup of coffee...and a few more laughs......I completely forgot all my troubles.
It was a wonderful break in my day-and only my best friend could know how to make it so perfect! Thank you for the wonderful mini-vacation, Mom!!! I Love you!
