Guest Post-A Hearty AND Healthy Breakfast!

Since I'm trying to finish a few projects before we leave on vacation-Mel has graciously offered to do a guest post today.   She'll also be stopping by next week and will be sharing a diy project she and her hubby have been working on,as well as, some updates in their beautiful home.  Trust me-it's going to be good-so don't miss out!  Now, without further ado-I'll let you get the one-up on a tasty AND healthy recipe Mel found for breakfast!!! (Mummy knows it has to be good because Mel never use to eat breakfast!)

 Hello everyone!  I'm so excited to do another guest post for mom and share this yummy recipe with you!

I don't usually eat much for breakfast, but a few months ago my colleague found an amazing recipe online for "Refrigerator Oatmeal".  I had never heard of it.  However, it looked delicious so I tried it.  It was AMAZING, and I actually LOVE breakfast now!


 
 
 
  Since Andy and I have been trying to eat healthy, this is a perfect option because it is low-calorie, and packed with protein.  I even make it dairy free! Plus, you can add in pretty much whatever your heart desires!
 
  Here is the base recipe along with some of the "add-in" I have put in it!  I promise you won't regret trying this tasty treat!

I did change it up a bit.  Here is what I did:
 
Base Recipe:
 
1/4 cup Rolled Oats (These are the old fashioned rolled oats not the steel cut or quick oats!)
1/4 Greek Yogurt ( I use 0% Fage)
1/3 cup Almond Milk ( You can use real milk as well but this tastes better to me.  You can also put in Coconut Milk too which was really great as well!)
1-1/2 teaspoons of Chia Seeds
1/8 teaspoon Almond Extract and Vanilla
 
 
Add-Ins:
- Fruit of any kind: I have used mango, blackberries, frozen cherries, strawberries and bananas
- Nuts- Pecans, walnuts and almonds
-Shredded Unsweetened Coconut- I use this pretty much every time! Delicious!
-Peanut Butter
- Protein powder
-Maple Syrup
- Cinnamon
 
I've played around with mixed chocolate protein and cherries, almonds and mango, coconut and blueberries and all were amazing! 
 
My new HEALTHY and delicious breakfast!!!  Coffee in my favorite kitty mug and refrigerator oatmeal!!!
