Mom's Caramel Bars

Mom's are always there when you need them.

When you are a child-they give you all the tools you'll need.

In hopes that you won't have to learn the 'hard' way, like they did.

Often times they are so involved in your dreams-that they forget about their own.

One of my mom's dream was to be a good cook.  To this day she is too humble to admit she is.  Her recipes have been published in our local church cook book, but even so, she's never been given the credit that she's due!

Last Saturday when I was busy cooking up the dishes for my get together, Mom called to say "Hello!"
We talked awhile, and then I said, "Mom, I'm busy, so I'll have to cut this short."  As always, she understood, but before she hung up she asked- "Humor your Mum for just a bit and tell me what amazing dessert you've made for tonight."
Maybe it was my mournful groan, or the fact that I went into panic mode because I'd been so busy worrying about the main menu, I'd forgotten dessert.  Or, maybe it was just that special quality that the very BEST mom's always have.

But, before my company arrived Saturday night-mom delivered a pan of her caramel bars.

She stayed for awhile.  She talked and laughed with our friends, and, with the graciousness that only a mom can have-she never spoke a word of why she brought her bars.

She just silently watched as her delicious bars were gobbled up by all.

She'd never think her bars were good enough to be featured on a blog.
And if you asked-she'd probably tell you -No.
Mom's a simple kind of gal.  No fuss.  No fanfare.
She usually doesn't follow a recipe for her baked goods.  She's made them so many times-she knows them by heart.  
But I found her recipe in our old church cook book!
And I'm posting it on my blog!
It may not be hugely popular yet-but at least it will be out there on the world wide web-for all to see and, hopefully try!

Mom's Caramel Bar Recipe:
32 caramels
2/3 cup evaporated milk
1 cup flour
3/4 quick cooking oatmeal
1/2 brown sugar
1/2 tsp soda
1/4 tsp salt
3/4 cup butter
1 (6oz) pkg semi-sweet chocolate chips
Melt caramels and milk in a double boiler.  Combine all dry ingredients and butter.  Reserve 1 cup of crumbs. Press remaining crumbs in greased 9x13 pan. Bake at 350 for 12 minutes.  Sprinkle chocolate chips over baked crumbs. Spread with caramel mixture and sprinkle reserved crumbs over entire mixture.  Bake for 20 minutes.  Let cool before cutting.
