Happy Friday ya' all!
I know I've been posting a lot of apple recipes lately.
But, here in our neck of the woods-September is all
about apples. If you've been following along,
you might even remember me posting this time last
Yes, we take our apples pretty seriously around here-and for
good reason. Not only are they delicious-and versatile (you can put them
in just about anything)
but they are also a huge source of income for many of our local folks!
So today I'm going to share a very SPECIAL recipe with you all that
came straight from my late Nana's recipe box!
Although I don't remember ever eating this scrumptious pudding at Nana's,
I do remember coming home from school and
having the whole house smell like apples and cinnamon
when mom would make it.
Mom always served it as a dessert with a yummy vanilla sauce,
but I guarantee the kiddo's would love it with a drizzle
of maple syrup for breakfast!
This recipe is SUPER quick and easy to whip up-and the
ingredients needed are one's you probably already have
in your pantry or fridge.
Once you have them all gathered ...
You simply mix them all together-(see how the bread is soaking up all
that yummy-ness).
And pour it all into a baking dish.
I like to serve it when it's still warm from the oven.
With a little of mom's warm-buttery-vanilla sauce!
Trust me- it's heaven in a bowl-I tell ya!
Here's Nana's recipe!
Apple-Raisin Pudding
Ingredients:
4 eggs
2 cups milk
1 cup sugar
3 tablespoons melted butter
1/2 teaspoon cinnamon
1 1/2 teaspoons apple pie spice
1 teaspoon vanilla
4 cups of day old bread-cubed
1/2 cup raisins
1 large apple (peeled and diced)
Vanilla Sauce
Ingredients:
2/3 cup white sugar
1 tablespoon cornstarch
1 cup water
1 tablespoon butter
1 heaping teaspoon vanilla
pinch of salt
Directions:
Preheat oven to 350. Mix eggs, milk, sugar, butter, spices, and vanilla in a large mixing bowl. Fold in bread cubes, apples and raisins. Pour into a greased 9x13 pan. Bake for 40-45 minutes, or until toothpick inserted comes out clean.
Meanwhile-in a medium saucepan, combine, sugar, cornstarch, salt and water. Bring to boil, over low heat-stirring constantly. Cook for 2 minutes or until sauce begins to thicken. Remove from heat and add butter and vanilla.
Serve warm. 8 servings.
