Italian Pasta Salad!



Salads are definitely one of my FAVORITE summer dishes!
Of course, you all know I LOVE creamy salads-like
potato and macaroni,
but sometimes(especially on a hot summer day)
 I  like a bit lighter fare.

 
Enter this colorful pasta salad
packed with fresh veggies, herbs,
topped with spicy Italian dressing
and Parmesan cheese!
What's not to love?
One of my favorite things about this hearty salad
is how versatile it is. 
Add any vegetable your heart desires
and  if you want to the kiddo's to love it
even more-a few pepperonis
VIOLA!
You've got a meal,
or the perfect side dish to whatever
is cooking on the grill!

Italian Pasta Salad


Ingredients:
8 oz box of Garden Rotini pasta (cooked and drained)
3 cups assorted fresh veggies ( I use:broccoli, cauliflower, onion, cucumbers, zucchini, peppers, and tomato)
1 cup spicy Italian dressing (you can add more to taste)
1/2 cup grated Parmesan cheese
2 tablespoons fresh basil (roughly chopped)
Olives and Pepperonis (optional)

Directions:
 Combine pasta and fresh veggies in a large bowl. Pour Italian dressing over top, and stir lightly. Refrigerate until ready to serve.  Top with Parmesan and fresh basil right before serving. Makes 8 (1 cup) servings.
