Thankfully, the weatherman says that Friday looks clear, so I am keeping my fingers crossed!!!
I'm also getting a head start on some dishes that I'm bringing to our family picnic!
The first dish I'm going to prepare is one of our families favorites-and since it only gets better the longer all of the ingredients co-mingle-I decided to make up a batch today.
Before I share the recipe for this VERY simple, yet yummy, salad-I wanted to tell you a funny little story.
As I previously posted, I went to my daughter Mel's this weekend to help her prepare for a baby shower she was hosting. While we were looking over her LONG, and very complicated menu, I noticed she had my Creamy Cucumber Salad listed.
I breathed a sigh of relief, and volunteered to make the salad, because THAT I could handle. After all, the cucumber salad takes about 10 minutes to make, and it only requires 5 ingredients.
Oddly, Mel seemed relieved that I offered to make the salad. When I asked why, she said, "I always follow the recipe you gave me to a T, and it still never turns out for me!"
Well now I was curious, so I reached into her cupboard where she keeps the box of recipes I compiled for her when she was in college, and pulled the Creamy Cucumber Salad out.
At first glance, I couldn't find anything amiss.
Cucumbers- check
Vinegar- check
Sugar-check
Dill-WAIT A DARN MINUTE! WHO ADDED DILL TO MY RECIPE!
That is exactly what I asked my daughter! Her response- "I had to add something to make it taste better!!! Besides, aren't pickles made from cucumbers? And don't pickles have dill in them? DUH!!"
Well, I NEVER! Okay-so maybe she was right. But still-the addition of dill couldn't possibly be the reason the salad turned out as horrible as Mel described. So what then?
So, I took a second glance.....
And that is when I burst out laughing! There it was....
Right at the very top of the recipe card-indeed, the very FIRST ingredient listed, should be MAYO, but instead it was...................
WATER!
Well, at least the mystery is finally solved...and after I made the salad for her party- I made sure BOTH of our recipes got updated.
Yep, Mel was absolutely right about adding DILL! Now my recipe has 6 ingredients, and it is even better than it was before!!
RECIPE FOR CREAMY CUCUMBER SALAD
3-4 large cucumber (peeled and thinly sliced)
1 1/2 cups mayo
1/2 white sugar
3 Tablespoons vinegar
1 large yellow onion (sliced thin)
2 Tablespoons fresh dill (chopped fine)
Salt and Pepper to taste
In a large bowl, combine mayo, sugar, and vinegar. Mix well. Add cucumber, onion, and dill, and stir until coated well. Chill in refrigerator before serving. Can be stored in air tight container for up to 7 days.
