I'm so excited! Tomorrow, Hubby, Bentley, and I are making the three hour drive to Mel's for the weekend!!!! Yippee!!! We get to babysit the grand babies!!! (see photo's here.)
Since it is a long trip-and we are leaving early-I figured a little sweet treat with a thermos of coffee might do us good.
So.....I decided to whip up a batch of these yummy cinnamon rolls-before I headed to my office!
MMM! I wish you were here, because the entire house smells of cinnamon!
If you would like to make this sweet and scrumptious treat for breakfast
or really any time of the day-

Here is what you will need:
Dough :
- 1 cup milk
- 1/4 cup butter
- 3 1/4 cups all-purpose flour, divided
- 1/4 cup granulated sugar
- 1/2 tsp. salt
- 1 envelope‘rapid rise’ yeast (approx. 2 1/4 tsp)
- 1 egg
- 1/2 cup white sugar
- 1/2 cup light brown sugar
- 2 1/2 tablespoons cinnamon
- 1/2 cup softened butter (1 stick)
- 2/3 cup raisins
- 2 cups powdered sugar
- 2 tablespoons butter
- 1 tsp vanilla
- 1 tablespoon milk
Directions for dough:
Combine milk and butter in a glass measuring cup (or a microwave-safe bowl.)

Microwave for 1 min. Remove and stir. Repeat for 20 seconds, or until butter is melted and milk is warm to the touch. (Not hot!!).
Combine flour (3 cups), sugar and salt, in a large mixing bowl.
Pour contents of yeast packet into bowl of stand mixer. Add milk mixture. (I use the best tool in the house (my fingers) to dissolve the yeast!
Add flour mixture and egg. Using dough hook attachment-begin mixing. (If you don't have a stand mixer-no problem! Just stir ingredients by hand.)
If dough sticks to the side of bowl-add the remaining 1/4 of flour.
Stir on medium setting for 5 min. (If your doing this without stand mixer-knead dough by hand for 5 minutes.)
Cover dough and let sit for 10 minutes.
Meanwhile, combine sugars, cinnamon and raisins for filling. (Set aside)
Prepare surface for rolling with flour. (I know I didn't have to show you this step-but it was chance for you to see my rolling pin 'cozy'. LOL! Thanks Mom!)
Lay dough onto floured surface and roll into 15"x10" rectangle.
Spread the 1/2 cup butter evenly across the dough. Cover with filling mixture-(spreading evenly.)
Beginning at the long end (15') tightly roll dough-pinching ends at the seam to ensure all that sweet goodness doesn't fall out!
Cut rolled dough into 12 cinnamon rolls.
Place rolls into a greased 9x13 pan.
Cover rolls and place in a warm location for 25 minutes to rise (I usually turn on my oven for a minute or two-and than shut it down)
Bake rolls in 350 degree oven for 15-20 minutes-or until golden brown.
Let cool for 5 minutes and ice.
