Once we were home and had put everything away, I was reminded just how exhausting shopping can be!!! My tootsies are killing me!!
Thankfully, the main dish I'm making for tomorrow's brunch is so easy! I'd already browned the sausage and made up the croutons last night. So I was way ahead of the game!
3 3/4 cups seasoned croutons. ****Tip (I make my own- by using day old french bread. I cut the bread into small cubes, drizzle with olive oil, and sprinkle 1/4 tsp Italian seasoning, 1/4 tsp garlic powder, 1/4 tsp kosher salt, and 1/4 tsp ground pepper. I spread the seasoned cubes out on a baking sheet-and bake at 400 degrees for about 15 min.)
1 lb sausage, browned and crumbled
2 1/2 cups milk
3 cups shredded Cheddar Cheese
6 eggs
1 tsp dry mustard
1 tsp pepper
1 can cream of mushroom soup
Once you have all the ingredients at your disposal- Grease a 9x13 pan.
Arrange croutons evenly in pan.
Sprinkle sausage and 2 cups of cheese on top of croutons.
Beat eggs, milk, and soup. Add dry mustard.
Pour egg mixture over top of crouton mixture.
Top with remaining 1 cup of cheese
Cover with aluminum foil and refrigerate overnight.
See! How easy was that? Now all I have to do tomorrow is- Preheat my oven to 325 and bake the casserole for 1 hour and 15 minutes. Remove foil and bake for 15 minutes more.
This cheesy egg dish will pair well with my blueberry muffins, and fruit parfaits!
