I may have mentioned a time or two(hundred) that I am CRAZY about breakfast!!! It truly is my FAVORITE meal of the day. During the week I don't take time to make anything fancy. A bowl of oatmeal-toast-yogurt...nothing special. But on Sunday.....well, that is a different story.
Sunday is the one day of the week, when hubby and I slow the pace down a bit-count our blessings, and savor the chance to enjoy an extra cup of coffee, and plan the week ahead. It is also the day we enjoy a hearty brunch, and whether it's just the two of us, or the whole darn family-it's always special.
This past Sunday was no different-other than the fact that our kitchen is currently being torn apart!! Thankfully, I planned ahead-and chose to make breakfast pizza! This recipe is not only SUPER easy-it's also very versatile. I found this recipe years ago, in a Taste of Home magazine-and I change it up every time I make it.
This YUMMY-hearty dish would be the perfect addition to your Easter brunch!

Breakfast
Pizza
Ingredients:
8 ounce can
crescent rolls
10 ounce package
pork sausage
¼ cup green pepper
(diced)
¼ cup onion (diced)
1 cup frozen hash
browns (I use southern style)
1 cup shredded
Cheddar cheese
6 eggs
½ cup milk
¼ teaspoon salt
¼ teaspoon pepper
Grated Parmesan
Cheese
Parsley
Directions:
Preheat oven to
375. Separate crescent rolls and pat
onto an ungreased 9x13 pan, sealing perforations. Brown pork sausage. Remove sausage from pan using a slotted
spoon. Add onion and green pepper to
pan, and sauté until tender. Drain. Crumble sausage, onion and green pepper, and
hash browns (in that order), over crescent roll dough. Sprinkle with cheddar cheese. Combine eggs, milk, salt and pepper in a
small bowl. Pour over other
ingredients. Sprinkle with Parmesan cheese. Bake for 25-30 minutes, or until golden
brown.

I bet that is delicious! We have big sunday breakfasts as well. I was wondering what the green lettuce like ingredient was in the breakfast pizza? At first, I thought it was spinach, which I would definitely add for my family. Thanks for sharing on Merry Monday!
ReplyDeleteThank you for your sweet comment and visit, Rachel! As for the 'green' stuff-it's roughly chopped parsley-but you could certainly add spinach-and I bet it would taste even YUMMIER!!! I've added green and red peppers-mushrooms-basically whatever I have on hand! Enjoy your weekend!!!
